Salmon Patties
Description
An easy and nutritious base to build a meal around. Pair with spinach and avocado or your favourite salad.
Ingredients
- 3 x 415 g tins of Red Salmon
- 2 kg of Potatoes for mashing
- Butter, Milk for mashed potatoes
- 3 x large Eggs
- 2 x 320 g packets of Beetroot, Carrot and Cabbage coleslaw mix
- 2 cups of Peas
- ¼ cup of fried Shallots or Onions
- 2 tablespoons of Olive oil
- Plain Flour for dusting
- Grated Parmesan cheese for dusting
Steps
- Preheat oven to 200 °C
- Make mashed Potatoes
- Drain liquid from Salmon
- Microwave Beetroot, Carrot and Cabbage and Peas for 1 minute
- Thoroughly mix all ingredients (except Flour and Parmesan) together in a large bowl
- Line a tray with baking paper
- Form patties on the tray
- Dust patties with Flour and Parmesan
- Bake in oven for 30 minutes
